Oatmeal Peanut Butter Cookies

Conversation in my kitchen a few nights ago with my husband:

John: Is there such a thing as oatmeal peanut butter cookies?

Me: I suppose so, why?

John: Cause that's damn good idea.

Me: Why did you think of that?

John: I don't know its just an idea that popped into my head. If I could cook I'd be a genius.

Well I hate to break the bad news to my genius, but yes, there is such a thing as an Oatmeal Peanut Butter cookie, so it's not something my genius thought up. Of course I made them for him, cause if there's anyone who deserves a cookie with peanut butter, oats, and chocolate chips, it's my husband.

Sometimes I have to stop and remember how very lucky I am to be married to him. I have a true partner who shows me on a daily basis, just how much he loves me, in both little and big ways.

He's a man who says, "I adore you" and "I love you Mama", "You look nice today"and "You look cute in that". I can't begin to tell you how great that can make you feel. He rubs my feet (but not nearly enough dammit, lol) and he opens the car door for me. He will reach over and rub my shoulders, or kiss my neck, or give me hugs and kisses just because. He holds my hand when we are walking, he brings me flowers for no reason and surprises me with little love gifts. He even helps with the dishes! He's a keeper I tell ya.

So when he hints around that he'd like something particular, I'm more than happy to make it for him.

So that's what I did.

If you like oatmeal cookies AND chocolate chip cookies, this is the ultimate cookie for you. I have to agree with my husband, they were a damn good idea.

Oatmeal Peanut Butter Cookies

3/4 cup butter, softened
1/2 cup creamy peanut butter
1 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
1 tsp vanilla
1 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 cups oats
1 cup semi-sweet chocolate chips
1 cup coarsely chopped pecans (I omitted the nuts this time and added in 1/2 cup of peanut butter chips)

Preheat oven to 375 F. Beat butter, peanut butter, sugars, eggs and vanilla until thoroughly blended.

Combine flour, baking powder and baking soda. Add to butter mixture gradually, beating until blended.

Stir in oats, chocolate chips and nuts. Mix well.Drop by heaping tablespoonfuls about 2 inches apart, onto cookie sheet. Bake for 10 to 12 minutes or until golden. Cool for 5 minutes on sheet, then transfer to rack and cool completely.

  3. Yum oh yum oh YUM! We'll be having some of these. Any cookie that can serve as breakfast in a pinch...good by me! Which brings me to bacon... Thought of you when I heard NPR's story about bacon in cookies... "HOW do I get Lisa to try those and tell us what she thinks?" I thought. "I trust Lisa more than these radio strangers."

    So...? Whaddya think?

  6. when i first saw them I thought there were raisins in them (oatmeal raisin) - chocolate chips we can handle.
