Dill Pickle Dip
This is what I love about bloggers.
One of my blogging buddies Rebecca made this delicious dill pickle dip a few months ago. Has it been that long Rebecca? I think it has. Anyway, Rebecca is a dill pickle addict. I'm a dill pickle addict. It's just one of the many reason we love each other.
We also love Amy, a fellow blogger. Amy's husband Paul is a dill pickle addict too. It's all one big happy pickle family, husbands included.
Amy made and blogged Rebecca's recipe a few weeks ago.
I made and photographed Rebecca's recipe.....ummm, like a month ago.
I didn't want to post the recipe at the same time as Amy, so I waited. I was patient. I was good, but this recipe can wait no more.
Dear lord, crunchy dill pickles in dip form!
Break out the pretzels and be prepared to indulge.
It's crunchy and it's dilly and it's perfect. We killed off this bowl in a few days and that was pacing ourselves!
I can already imagine taking this to a party and having it be the first thing to go!
Dill Pickle Dip
recipe from Foodie with Family
1 (8 ounce) package of cream cheese, softened to room temperature
1- 1 1/2 cups chopped dill pickles (I used my mini food processor - it was a snap!)
1/4 cup finely chopped sweet onion
2- 4 tablespoons pickle juice (use less for thicker dip or more for thinner dip)
1 teaspoon dried dill weed
1/2 teaspoon kosher salt
freshly ground black pepper, to taste
Use a wooden spoon to press into the cream cheese then stir until loosened up and smooth. Stir in all of the remaining ingredients until evenly distributed. Transfer to a serving dish and cover with plastic wrap. Refrigerate for at least an hour before serving.
This dip is good for up to a week when stored tightly covered in the refrigerator. It may become thinner as the week draws to an end.

You did not need to wait! Honestly, I think we all should have posted it on the same day - like a dill pickle dip frenzy. It's so good, huh? I've made it countless times already. I laugh every time I read "can be stored up to a week." Pffft. In our house it doesn't last more than a day!
HA! I'm with Amy. One big pickle party! I said it 'can be stored up to a week' not 'it is stored up to a week'. Like it would last that long! I'm so glad you liked it, Lisa, and this makes me remember that I need to make another batch. Mmmm. Pickles.

I served this today to some family and some friends, they couldn't get enough... I was hoping to have some left overs for, well left overs but I've got nothing left. Great recipe!

I know you go to Trader Joe's, Lisa. Have you tried their dill pickles? They are amazing - taste like someone made them in their home. That is all I buy now.
This reminds me of the stuffed pickles I make. I scoop out the middle of pickle halves and mix with cream cheese pipe it into the halves and sprinkle with shredded chedar cheese..

Haven't had a chance to make this yet but I am going to real soon, but had an idea for all you pickle addicts use this as a dip for fried pickles.
What is best to dip into it with?
I literally just got up off the couch where I was on Pinterest and made this before I even pinned it! Awesome!
I use pickles for dipping but you could use fresh veggies or tortilla chips too.
I made this dip for supper tonight along with the fried pickles and it was wonderful. I did make just a couple of changes I browned my onions with a little couple of cloves of garlic. I am hooked and may even cook hamburgers for supper tomorrow night so I can use it as a burger topping. Cat I'm going to try your idea too.

THis looks great. Gonna have to try it soon. Meanwhile for a quick fix.....try just eating a dill pickle chip on a ritz cracker! IT don't sound to good but Its OHMYGOSH! Try it!

I made this for a BBQ this summer and everyone gobbled it up. It would also be awesome spread onto a sandwich. I am making it tomorrow for a baby shower as well as your deviled egg spread, thanks.

When I make this I use pickle relish and add ham to it....a lot like a pickle wrap! I love this stuff! We just use crackers and the dip as a spread.
Just made this..... Soooooooo good. I'm using practical thins and sourdough bagettes. I think I like the bagettes best. But the dip is fabulous! Couldn't wait for it to chill.
i made it with mt. olive bread and butter pickles even better

We add minced garlic or garlic salt in ours...best with Mt. Olive Pickles IMO. This is lick the bowl good!

this was delish! i found that it was a tad on the salty side. next time, i might cut back on the amount of salt added AND serve with lays potato chips! thank you for sharing!
Has anyone tried freezing this? Wild love to have this made ahead of the holiday rush.
This sounds perfect for pinwheels!! Spread the dip out on a tortilla, add some ham or turkey, roll up and cut! I can't wait to make this dip! =]

Simply WONDERFUL! We love anything pickles. We are going to use it on hamburgers, sandwiches and as a dip! I did sautee my onions and let them cool before adding them. One batch is far from enough as my kids and husband just devoured the first one!

I made this today with hot and sweet pickles and added some sriracha, it is sooo yummy. Perfect with some ruffles! Can't wait to try it with dill.

This sounds awesome, can't wait to try it. I make something similar, Instead of pickles and cream cheese, I make pepperoni (chredded in my cuisine art) mixed with sour cream. I'm ready to mix things up a bit at the next family gathering. Thanks for sharing.
came across this recipe on Pinterest. Made it today with a couple of changes. I added 2 heaping Tablespoons of sour cream (I prefer sour cream dips to cream cheese dips), an additional tsp of dill weed and I used a combo of Vlassic dills and Hot and spicy dills. DELISH!!! I will be lucky if this lasts until tomorrow and I will probably be blogging about this on my own site! Thanks.
I find it very difficult to get the pickles into the dip to begin with... they seem to make it to my mouth before they get there!!!
This sounds awesome! but question, do you think homemade greek yogurt cheese can be substituted for the cream cheese? I'm trying to keep things as healthy as I can lately.
Just made this dip and it was fabulous!! We added 1/2 cup greek yogurt and ate with Gluten free pretzels for a GF snack! Thanks for the fun idea!
Growing up in Canada there was dill pickle dip made by the same people who make Philadelphia cream cheese. It is delicious!!! You almost want to eat it with a spoon! But since moving to the US I haven't had any, but now I can thanks so much.
